Avolta has secured a new 12-year food & beverage contract at Toronto Pearson International Airport, marking a significant expansion of its presence at Canada’s busiest gateway.

The agreement will see Avolta’s F&B division, HMSHost, overhaul more than 5,300sqm (57,500sq ft) of dining space across Terminals 1 and 3. Beginning in early 2026, the refresh will introduce a strong line-up of Canadian brands alongside enhanced digital and service features.

Among the new arrivals are Mary Brown’s Chicken, OEB Kitchen + Bar and Libretto Slice Shop, reinforcing the airport’s focus on local favourites and recognisable names. HMSHost will also deepen its partnership with chef Roger Mooking, launching a new concept following the success of Twist by Roger Mooking in Terminal 1.

Steve Johnson, President and CEO, North America, Avolta, said: “This is an exciting evolution of a partnership between HMSHost and Toronto Pearson that began nearly 25 years ago. Over the years of collaboration, we have created a world-class traveller experience at Toronto Pearson and now, together, we are raising the bar to usher in the future.”

Deborah Flint, President and CEO of Toronto Pearson, added: “Airports are evolving into vibrant culinary destinations. From full-service dining to convenient grab-and-go options, we’re excited to partner with HMSHost to bring fresh and diverse food experiences to our passengers as they travel through Toronto Pearson.”

Alongside the new openings, the concessions refresh will include menu updates and digital enhancements across existing outlets. Technology such as digital waitlists and self-order kiosks will be introduced to streamline service and improve speed and convenience. Travellers will also be able to access the Club Avolta loyalty programme, unlocking exclusive offers, rewards and cross-promotions.

Johnson concluded: “Combined with our new restaurants and bars, these innovations will change the dining landscape as travellers know it. 2026 will be a year that everyone will want to travel through Toronto Pearson, no matter their ultimate destination.”

The win further consolidates Avolta’s position in North America and reflects the growing strategic importance of F&B as airports seek to enhance passenger experience while driving non-aeronautical revenue growth.
