Paradies Lagardère plans new dining concepts at Jacksonville Airport

Paradies Lagardère is set to open two new locally inspired dining options at Jacksonville International Airport (JAX) Concourse B. Both will go live in 2027, when the new concourse project is completed.
Salt & Tide is a full-service restaurant and bar inspired by Jacksonville’s coastal fish camp tradition. Pura Bean Coffee Co is a popular local roaster known for its artisan blends and deep community roots. Together, the concepts aim to deliver fresh flavours, elevated hospitality and a distinct sense of place for travellers passing through Northeast Florida.
“With construction of Concourse B slated to be complete by the end of the year, we have now finished selecting the coffee and dining options our passengers can expect to enjoy once it’s open,” noted Jacksonville Aviation Authority CEO Mark VanLoh.
“Pura Bean Coffee will give travellers another taste of local coffee offerings. The wonderful seafood and aesthetics of the Northeast Florida region will be notable with Salt & Tide.”
Paradies Lagardère celebrates local culinary identity
Introducing a relaxed, coastal atmosphere to the terminal, Salt & Tide will offer breakfast, lunch and dinner options alongside a robust bar programme. The menu features regional seafood and shareable plates, alongside craft cocktails, local beers and non-alcoholic selections.
Founded in Jacksonville by local roaster Chris Diedrich, Pura Bean Coffee Co will showcase the city’s coffee culture through freshly roasted beans, espresso drinks and signature blends. It will also offer teas, hot chocolate, locally sourced baked goods, and grab-and-go items perfect for early departures and quick connections.
“Our goal is always to create dining experiences that are rooted in the communities we serve,” commented Paradies Lagardère Senior Vice President of Operations – Dining Division Leigh Allan. “Jacksonville has a strong culinary identity, and Salt & Tide and Pura Bean Coffee allow us to celebrate that local character while delivering the quality, consistency and service travellers expect.”
“Being part of JAX allows us to share Jacksonville’s coffee culture with people from all over the country,” said Diedrich. “From the way we source and roast our beans to the partnerships we build locally, everything we do is about community. We’re excited to bring that same spirit to the airport.”
